Some sous vide accessories are necessary, others are totally useless. Take the example of people using ping pong balls or "water balls" to insulate and reduce the water evaporation of a water bath. It works. Nevertheless these balls will be very fast coated with lime-scale and other residue. This will significantly increase the risk of developing bacterias. It's unhygienic! The most economical way to insulate the container and reduce water evaporation is to cover the container with cling film. Just moisten the sides of the container, apply the cling film on it...and that sticks!
Of course, if you are a professional, you don't have time to proceed this way each and every day. Best is a container with a custom made lid that fits perfectly to your SWID.

A thermometer with a needle penetration probe is necessary, especially if you start with sous vide cooking or you make “short time cooking”. Should you need to experiment a new recipe and determine the exact time the foodstuff reaches the core expected temperature, then a platinum thermometer will be the perfect choice for you. Of course if you make long term cooking for 6 hours and above, the penetration probe will not be necessary.
